Black Eyed Bean with Coconut

Serves: 4 - 6
These delicious, floury beans are made tender in a stock of fresh chilli & desiccated coconut creating a dish with a sweet and nutty flavour.

Prepare:

300g beans, soaked, uncooked.

300g chopped onions

30g desiccated coconut

7g fresh green chillies, sliced lengthways

1 ½ teaspoons (tsp) cumin seed

1 ½ tsp sugar

1 tsp turmeric

1 tsp salt

30g peanut or other oil



Cook:

1. Heat oil in pan, add cumin seed and allow to sizzle.

2. Remove from heat. Add everything else and stir.

3. Barely cover with boiling water. Return to medium heat until boiling.

4. Reduce heat to low, with lid on. Cook very slowly until beans are soft (up to 1 ½ hours)
